GLUTEN FREE SPIDERMAN CHOCOLATE CUPCAKES












RECIPE

DRY INGREDIENTS

1 Cup Rice Flour
1/2 Cup Coconut Flour
1/2 Cup Tapioca Starch
1/4 Cup Quinoa Flour
1/2 Tsp xanathan Gum
1/2 Coaco Powder
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/4 Tsp Salt


WET INGREDIENTS

1 Cup Coconut Milk
3 Large Eggs
1 2/3 Cup Sugar
1 Tsp Vanilla
2 Tbsp Apple Cider Vinegar
2 Tbsp Distilled Water



  1. Pre-heat oven to 350 degrees
  2. Combine dry ingredients in a bowl
  3.  Mix the wet ingredients in a bowl using a mixer.
  4. Combine dry and wet ingredients in a bowl.
  5. Spoon batter into cupcake papers 20 mins.
  6. Add sprinkles, icing, or coloured sugar crystals for decoration
