Gluten Free Cranberry Chocolate Chip Oatmeal Cookies |
DRY INGREDIENTS
1/4 Cup Quinoa Flour
1/2 Cup Coconut Flour
1/4 Cup Almond Flour
( For allergies substitute Almond and Coconut flour with any wheat free flour of your choice)
1/4 Tsp Salt
1/2 Tsp Xanathan gum
1/2 Tsp Baking Soda
1/2 Tsp of Cinnamon
1 1/2 Cups Gluten Free Oats (Red Mill Brand from Superstore, it's certified GF)
3/4 Cup Craisins (dried cranberries)
1/2 Cup semi-sweet chocolate chips
WET INGREDIENTS
1/4 Cup Brown Sugar
3/4 Cup Sugar
2 Eggs
1 Tsp Vanilla
1/2 Cup Butter (softened)
- Pre-heat oven to 350 degrees
- Combine dry ingredients in a bowl but save the Crasins and chocolates chips until later.
- Mix the wet ingredients in a bowl using a mixer.
- Combine dry and wet ingredients.
- Add the Craisins and chocolate chips
- Spoon onto a cookie sheet and bake for 10-15 mins.
