Gluten Free Cranberry, Chocolate Chip & Oatmeal Cookies

Since I have been gluten free I've been on the search for recipes and gluten free products that actually taste good.  What I mean is that it should taste like food a person can enjoy eating. I look online and in various cook books for recipes but I like to remix them and make them work for me.  I've tried some and failed some. But when I succeed, I don't mean to brag but it usually tastes pretty damn good.  I promise and plus my hubby to be is a willing participant in my taste tests.  He's still alive so that's a sign I'm doing things right.
So, I'm not gluten free because it's a fad. Believe it or not I'm not happy paying almost seven dollars for a loaf of bread that is half the size of a regular loaf.  I'm not here to preach about how evil gluten is...gluten filled treats are quite delicious.  However, that little protein makes me feel sick.  There are tons of sites detailing and explaining what gluten is and why it make some people sick (get to googling!).  But, before you do check out my recipe for Gluten Free Cranberry Chocolate Chip Oatmeal Cookies.

Gluten Free Cranberry Chocolate Chip Oatmeal Cookies




DRY INGREDIENTS

1/4 Cup Quinoa Flour
1/2  Cup Coconut Flour
1/4  Cup Almond Flour
 ( For allergies substitute Almond and Coconut flour with any wheat free flour of your choice)
1/4 Tsp Salt
1/2 Tsp Xanathan gum
1/2 Tsp Baking Soda
1/2 Tsp of Cinnamon
1 1/2 Cups Gluten Free Oats (Red Mill Brand from Superstore, it's certified GF)

3/4 Cup Craisins (dried cranberries)
1/2 Cup semi-sweet chocolate chips


WET INGREDIENTS

1/4 Cup Brown Sugar
3/4 Cup Sugar
2 Eggs
1 Tsp Vanilla
1/2 Cup Butter (softened)

  1. Pre-heat oven to 350 degrees
  2. Combine dry ingredients in a bowl but save the Crasins and chocolates chips until later.
  3.  Mix the wet ingredients in a bowl using a mixer.
  4. Combine dry and wet ingredients.
  5. Add the Craisins and chocolate chips
  6. Spoon onto a cookie sheet and bake for 10-15 mins.
